About Sinta
Sinta: An old Tagalog word meaning - “darling” or “beloved”
“This project is a love letter from Chef Zach to his wife, Katrina”
Sinta began in 2023 as a handful of quiet, invite-only dinners — no fixed schedule, no storefront, word of mouth only. Chefs Zach and Katrina Panoske cooked for chefs, food writers, and friends they admired, testing a modern vision of Filipino food built on technique and told through story.
By year two, Sinta had outgrown the secret. Monthly pop-ups opened to the public and sold out every single month — Kinilaw, Sisig, Kare Kare, Bicol Express, plated on handmade dishes the Panoskes brought home from the Philippines.
Now marks Sinta’s next chapter: currently, a residency at Agency Cocktail Lounge, a James Beard nominated bar, inside the historic Dubbel Dutch Hotel. It’s not a storefront and it’s not a pop-up — it’s Sinta’s food program, evolving in real time, paired with Agency’s cocktail program four nights a week.
Every dish still begins in the Philippines — in tradition, in memory, in the flavors Katrina grew up with and introduced to Zach— and arrives at the table refined, intentional, and alive with story.
